Feta and Roasted Pepper Veggie Wrap

Ingredients:
1/4 cup cauliflower – small florets
1/4 cup broccoli – small florets
1/4 cup diced tomatoes – use fresh
1/4 cup red and yellow bell pepper – finely diced
1/4 cup diced squash – use a mix of yellow and zucchini
1/2 cup feta cheese – crumbled
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon black pepper
1 tablespoon balsamic vinegar
1 tablespoon fat-free Italian dressing
1/2 cup roasted red peppers – use fresh or canned
4 each flour tortillas, large – use flavored tortillas if available
4 each leaf lettuce – use 1 leaf per sandwich

Combine first 11 ingredients to make the sandwich filling. For each wrap, place one leaf of lettuce and one ounce of roasted pepper in the center of tortilla wrap. Add approximately 3/4 cup of veggie and feta mixture, and then close up by folding up the bottom few inches, then folding in the sides, then rolling up. Secure each half of the wrap with a frilled toothpick. Cut in half on an angle for service.
